Gluten-Free Banana Chocolate Chip Bread

This is a great and easy recipe to make that is awesome as both dessert and as breakfast. There are also many substitutions that you can make in case there are any other dietary restrictions. Let’s get into it!

Prep time 15 minutes; cooking time 45 minutes.
Preheat oven to 350 degrees and grease loaf pan.

Ingredients:
4 – 5 medium or large bananas mashed
4 large eggs
1/4 cup extra virgin olive oil (or coconut oil)
1/4 cup maple syrup (or honey)
1 teaspoon vanilla extract
2 cups All-Purpose Gluten-Free Flour (can be found at major retailers – WalMart, Food Lion, Harris Teeter)
1 teaspoon baking powder
1/2 teaspoon baking soda
Chocolate Chips, this is up to personal taste: 1 cup for extra-extra sweet and 1/3 for an easy sweet taste

Mash bananas in a large bowl and add the eggs, olive oil, maple syrup, and vanilla extract. Whisk well. Next add the Gluten-Free All-Purpose Flour, baking powder, baking soda, and the chocolate chips to the wet ingredients. Whisk well. Pour the batter into the bread pan and place on the middle rack for 45 minutes, or until golden brown. Cooking time may vary.

Banana Pudding

It’s always a wonderful time in the south with this dessert! It’s a personal favorite among many, and that’s because it’s so doggone good. So, how do you make it healthy? Well, there are some super easy substitutions that you can do to your personal recipe!

Substitutions:
Reduced-fat or whole-grain vanilla wafers
Sugar-free vanilla instant pudding
Skim Milk
Vanilla nonfat Greek yogurt (this one is a goody!)

Cinnamon Glazed Apples

This is a super quick and easy dessert or snack recipe guaranteed to win with all ages.

Ingredients:
4 pounds of apples – sliced pretty thick
3-4 teaspoons of cinnamon
1/2 teaspoon of allspice
2 tablespoon of maple syrup
1/4 cup of water (adjust to apple size and amount)
Optional additions:
a thickener: non-GMO Cornstarch or arrowroot 2-3 teaspoons
2 tablespoons butter
1 tablespoon of sweetener

Put the apples and water in a medium to large skillet or pot on the stove on medium heat. Add cinnamon and allspice and mix. Lid the pot for 20 minutes while continuing to stir every 5 minutes. Be careful that the apples are not getting too mushy. Once done, drizzle or stir the maple syrup over and enjoy! They’re great by themselves or with some vanilla bean ice cream.
