Butternut squash has recently come onto the food scene, and we are loving it! It can be done as either a side or as a main course meal. One way that we personally love eating butternut squash is by stuffing it. There are numerous stuffing combinations you can do including, wild rice, quinoa, cranberries and more. Cauliflower is a great healthy alternative. You can cook it in the oven, add spices, and make some old fashion gravy to go with it.
